The Best Chicken Pot Pie

Are you looking for a quick and easy dinner? Well boy, do I have the recipe for you! This is one of my family’s absolute favorite recipes and they request it almost every week, so I make sure to always have the ingredients on hand. I’ve made this for a few friends that have recently had babies and it’s been a hit with all of them!

Here’s What You’ll Need

2 Chicken Breast

1/2 bag of Frozen peas or 1/2 can of peas

2 pack of refrigerated pie crust (I use this)

Campbell’s Cheddar Cheese Soup

1/2 Red bell pepper

1/2 Onion

1 TBLS Minced Garlic

1 TBLS Oil or Butter

The How To

The pie crust will need to sit out of the refrigerator for about 15 minutes to reach room temperature. While waiting for the crust to reach room temperature, start cutting up the bell pepper, onion, and chicken. I personally chop the veggies first and put in a separate bowl. The chicken will need to be in bite size pieces and the veggies can be to your preference, I prefer to have them minced. When the pie crust has reached room temperature, spray the pie pan with nonstick spray, and roll the dough out in the pan. Bake for 10-12 minutes at 450 degrees, depending on the brand temperature and time may vary. While the bottom crust is baking, put the chicken in a skillet with about tablespoon of oil or butter and season to your preference. *Pro Tip: If your family loves Ranch Seasoning, sprinkle some on the chicken while its cooking adds a bit of extra flavor.* Once the chicken is cooked, scoot all of the pieces to one side of the skillet. Add the bell pepper and onion. Sauté until the onion is translucent, making sure to scrape the bottom of the pan for the bits of extra flavor. Add Garlic. Mix it. Add the peas, I personally season the peas with salt and pepper. Mix well and let it sauté for a few minutes. Turn off the burner and add the Cheese Soup and mix well again. By this time the pie crust will be done. Pour the mixture of top of the baked pie crust, evening it out as much as possible. Add the top layer of pie crust. I use a butter knife bottom and gently press the pie crust down to meet the bottom layer. Bake for 10-12 minutes at 450 degrees. Let cool for about 5 minutes and Enjoy!

Once the pie crust reaches room temperature, spray pie pan and roll out the crust in the pan.
Once the chicken is cooked, add the bell pepper and onion, sauté until onion is translucent. Add garlic, peas and cheddar soup. Mix well.
Cook for 10-12 minutes at 450 degrees. Then let it cool for 5 minutes. Enjoy!
